Nom Nom - No-Bake Chia Energy Bites


I saw these on Instagram, and had to give them a try!
  • 1 cup rolled oats
  • 1/2 cup nut butter (I used almond)
  • 3 Tbsp honey
  • 2 Tbsp desiccated coconut 
  • 1 Tbsp chia seeds
  • 1/2 tsp vanilla extract
  • 1 oz. dark chocolate, melted
Stir oats, nut butter, honey, coconut, chia seeds, and vanilla extract in a bowl until mixed well. Form into 15 small balls and drizzle with the melted chocolate. Refrigerate until firm and enjoy 3-5 bites for a grab-and-go breakfast or snack!
